Paleo Pumpkin Everything – For the teens who love pumpkin spiced lattes from Starbucks, join us for three hours in the kitchen with Chef Carrie…We’re making Pumpkin Curry Soup with Crispy Sage & Cashew Crème Fraiche, Paleo Pumpkin Cookies, and a Better than Starbucks Pumpkin Spiced Latte.  Recipes include nuts.



Summer 2019    TEEN CAMP     ages 12-17

Food vs. FAD TEEN Series / July 8-11 / 10:00AM-1:00PM / $350   SIGNUP HERE

For the beginner or experienced TEEN chef, this hands-on series of four classes (12 hours) will take you on a unique food journey, exploring the most recent food fads and life styles.  You will learn current food trends and fads, including Gluten-Free, Vegan, and Paleo lifestyles and hemp and matcha ingredients.  Chef Carrie will teach you how to make healthy, organic, and delicious garden-fresh meals while incorporating fresh ingredients from the on-site garden.  Includes lunch and recipes for each guest.  Food allergy/sensitivity accommodations.  Gluten-Free (GF), Vegan (V), and Nut-Free (NF) noted.

French Macarons Baking Class / August 9 / 1:30PM-4:30PM / $90   SIGNUP HERE

Calling all TEEN chefs, this hands-on baking class (3 hours) teaches you the techniques and tricks for baking the perfect French Macaron.  We use only natural food-based colors for our baked creations, eliminating traditional food colorings and unnatural flavorings.  Chef Carrie will teach you how to make the perfect sweet meringue-based confection.   Food allergy/sensitivity accommodations.  Gluten-Free (GF), Vegan (V), and Nut-Free (NF) noted.

Green Cuisine Cooking Class / March 15 / 4pm-6pm /$75

For the beginner or experienced chef, this class is perfect for kids and teens interested in exploring whole-food based food colorings. We’ve ditched the artificial food dyes and will teach you to create Leprechaun green colored cupcakes and smoothies using garden fresh ingredients. Join us this Friday, March 15 (ages 6-16)

SUMMER 2018 TEEN COOKING CLASSES & CAMPS

AGES 12-17

“Around the World” 4-Day Cooking Series / July 9-12 / 10:30AM-1:30PM / $350

No need for an expensive vacation this summer—let your teenager transport to multiple continents and countries at the Longest Fork!  This class will take your teen to France, Italy, and Asia teaching them all the basics and allowing them to develop a palette for a multitude of different flavors. The week will begin in France as they learn the art of creating the perfect Savory & Sweet Crepes, Salmon Provencal, Butter Lettuce Salad with Champagne Vinaigrette. Next, they’ll be transported to Italy creating Hand-Made Italian Pasta with Garden Marinara Sauce, Cauliflower Crust Pizza, Matcha Lattes and Macarons (Cocoa & Matcha, Strawberry & Chocolate Ganache, Samoa Macaron). At the end of their journey around the world, they’ll explore Asian cuisine with the perfect batch of Anise Spiced Vietnamese Pho, Spring Rolls, California Sushi Rolls.

Vegan Cooking Class / July 13 / 10:30AM-1:30PM / $90

SIGN UP

Replenish and refuel your body with healthy summer superfoods during this garden-to-table vegan cooking class. All your teen’s favorite foods, sans the meat and cheese! By the end of this three-hour session, you’ll leave with recipes for Vegan Street Tacos, Grilled Pineapple Mojito Salad, Mango Jicama Salsa, and Churro Donuts with Raw Chocolate Sauce. And yes, that means your teen will be cooking dinner for YOU the rest of the summer.

**On-site garden availability depends on weather conditions and may be subject to change.

These classes are immersive, hands-on cooking courses. You will be on your feet cooking most of the time so please wear comfortable closed-toe shoes.

    • Hi Susie. Thanks for your inquiry. We are in the middle of a major garden and outdoor kitchen improvement which we thought would be completed in July. It looks like it won’t be finished until August, which means our summer classes are on hold until then. We will keep the website updated.
