Serves 6-8


  • 1 small shallot, chopped

  • 1 ½ cups pomegranate seeds

  • ¼ cup olive oil

  • 1 ½ tsp. finely grated lemon zest

  • 1 Tbsp. raspberry wine vinegar (or red wine)

  • 1 Tbsp. fresh lemon juice

  • ½ cup finely chopped fresh mint

  • Kosher salt and freshly ground pepper



  1. Combine all ingredients in a small bowl and season with salt and pepper to taste.  And enjoy alone, in a salad, on a sandwich or with chicken, turkey, fish, or pork.


DO AHEAD:  Prepare recipe (WITHOUT MINT) 1-day ahead.  Cover and chill.
